When you live in Minnesota you can never have too many bar recipes. That is just a fact. And these bars? They are as delicious as they are simple. Plus, you probably have most of the ingredients sitting in your kitchen right now!
Start off by preheating your oven and preparing your baking pan. I highly recommend lining it with parchment paper as this will make it easier to lift the bars out of the pan once they have set up. Be sure to spray the pan and parchment paper with nonstick spray!
In a medium bowl, combine the salt, graham crumbs, and granulated sugar. Pour in the melted butter and, using a fork, mash the ingredients together until you have a nice crumbly texture. Press this mixture into your prepared pan. I like to use the bottom of my 1/4 cup to press down so I have an even layer.
Once the crust is tightly packed into your pan you can pop it in the oven to bake for 6 minutes. While this is baking go ahead and make the filling!
In a large bowl, combine the chocolate chips, butterscotch chips, crushed pretzels, and most of the shredded coconut. (Reserve a little of the shredded coconut to sprinkle on top later.) Once those are thoroughly tossed together you can add the can of sweetened condensed milk and mix until everything is coated. Once your crust comes out of the oven you can carefully pour this mixture on top of the crust and gently spread it out in an even layer. Sprinkle that little bit of coconut that you had reserved from earlier and then pop it in the oven!
It is really important to allow these bars to cool before removing them from the pan. If they are still warm and melty when you try to remove them you could end up with a crumbly mess on your hands. They are also a lot easier to cut once they have cooled!

Ingredients
For the Crust:
- 1 1/2 cups Graham Cracker Crumbs
- 1/4 cup Granulated Sugar
- 4 Tbsp. Butter – melted
- Pinch of Salt
For the Filling:
- 1 cup Chocolate Chips
- 1 cup Butterscotch Chips
- 1 cup Pretzels – crushed into smaller pieces
- 1 1/4 cup Shredded Coconut
- 14oz. can Sweetened Condensed Milk
Instructions
- Preheat your oven to 350-degrees. Line a 9×9-inch cake pan with parchment paper and spray liberally with nonstick spray.
- Mix together the graham crackers, sugar, and salt until fully combined. Add the melted butter and mix until butter is evenly distributed and the mixture is crumbly.
- Press this mixture into your prepared pan in an even and flat layer.
- Bake the crust for 6 minutes at 350-degrees.
- While the crust is baking you can prepare the filling!
- In a large bowl, mix together the chocolate chips, butterscotch chips, crushed pretzels, 1 cup of shredded coconut, and 14oz. of sweetened condensed milk.
- Once that mixture is thoroughly combined, carefully spread it over the crust that you prepared.
- Sprinkle the remaining 1/4 cup shredded coconut over the top.
- Bake at 350-degrees for 25 minutes or until the chocolate has started to melt and the shredded coconut is nicely toasted.
- Allow to fully cool before carefully removing from the pan and serving.
