I am going to let you in on one of my deep, dark secrets. Even as a trained pastry chef I LOVE birthday cake. I’m talking sheet cake from the grocery store, marble cake with those huge frosting balloons or flowers. Is it super sweet? Yes. Is it fancy? Not at all. It tastes like a memory from childhood and I will love it forever. For some reason though, it seems impossible to replicate that very specific flavor from scratch or with a cake from a fancy bakery. It just isn’t the same and I cannot be convinced otherwise.
Knowing that I cannot perfectly copy the grocery store sheet cake I decided to do my own fun take on it! Birthday Cake Blondies are like the perfect combination of birthday cake + cookies in an easily transportable bar form. It is also a total breeze to make – what is not to like here?

Ingredients
For the Blondie Bars:
- 1 c. Butter – melted
- 1 1/4 c. Brown Sugar
- 1/2 c. Granulated Sugar
- 3 Eggs – room temperature
- 2 tsp. Vanilla
- 3 tsp. Cake Batter Flavoring
- 2 1/2 c. All-Purpose Flour
- 1/2 tsp. Baking Powder
- 1 tsp. Salt
- 1/4 c. Rainbow Confetti Sprinkles (or sprinkles of your choosing)
For the American Buttercream:
(Feel free to use your favorite premade frosting if you would like)
- 8 Tbsp (1 stick) Butter – room temperature
- 2 c. Powdered Sugar
- Pinch of Salt
- 1 tsp. Vanilla
- 1 tsp. Cake Batter Flavoring
- 1 – 2 Tbsp. Milk – as needed
- Sprinkles to decorate
Instructions
For the Blondie Bars:
- Preheat your oven to 350-degrees. Line a 9×13 baking dish with parchment paper and spray with nonstick spray. Set it aside for later.
- In a medium bowl, sift together the all-purpose flour, salt, and baking powder.
- In a large bowl, whisk together the sugars, eggs, butter, vanilla, and cake batter flavoring.
- Add flour mixture and 1/4 cup of sprinkles to the wet ingredients and mix until just combined.
- Press dough into your prepared baking dish – making sure it is an even layer.
- Bake for 30 minutes at 350-degrees. Allow to cool fully before frosting.
For the American Buttercream:
- Beat or whisk the butter until light and creamy – about 2 minutes.
- Add the powdered sugar, salt, vanilla, and cake batter flavoring. Beat or whisk until fluffy.
- Add milk as needed to get to the consistency that you would like.
- Pipe or spread onto your bars, decorate with sprinkles, and enjoy!
Notes
This recipe does use a specialty flavoring to achieve that signature Birthday Cake flavor. I order the Cake Batter Flavoring from LorAnn and absolutely love it. If you do not want to purchase a special ingredient I totally understand! These Blondies are just as good without the special flavoring!
