Description

These Brownie Cookies are the best of both worlds! Chewy and indulgently chocolatey with the perfect crinkly brownie top.

Enjoy them as they are, or sandwich them together with your favorite frosting or ice cream!


Ingredients

  • 1 cup Dark Chocolate Chips
  • 1/2 cup Dark Chocolate – chopped up
  • 2 large Eggs – room temperature
  • 5 Tbsp. Butter
  • 3/4 c. Granulated Sugar
  • 1/3 c. Dutch Processed Cocoa Powder
  • 1/2 tsp. Vanilla
  • 1/4 tsp. Espresso Powder
  • 1/4 tsp. Salt

Instructions

  1. Preheat your oven to 350 degrees. Prepare 2 cookie sheet pans with parchment paper and set them aside for later.
  2. Put the 1 cup of chocolate chips and butter in a microwave-safe bowl. Microwave for 15 seconds, then stir. Repeat this process until the butter and chocolate chips are melted and smooth and combined. (Microwaving in short 15-second bursts ensures that the chocolate is melted gently and doesn’t burn.)
  3. Once the chocolate and butter are melted and combined, whisk the vanilla and espresso powder into the chocolate. Set aside for later.
  4. Using a stand mixer or handheld mixer, whisk together the granulated sugar and eggs. You want to whisk these together until light, fluffy, and about doubled in volume.
  5. Add the chocolate mixture into the egg mixture. Whisk together until combined – be sure to scrape down the sides and bottom of the bowl.
  6. Sift the cocoa powder and salt into the egg/chocolate mixture. Whisk to thoroughly combine.
  7. Fold in 1/2 cup of chopped chocolate.
  8. Place the batter in the fridge for 8 minutes to chill.
  9. Using a 2-inch cookie scoop, scoop dough onto your prepared cookie sheets. Be sure to leave enough room to allow cookies to spread. (I wouldn’t do more than 6 cookies per cookie sheet.)
  10. Bake at 350-degrees for 13 minutes. Cookies will be very puffy when they come out of the oven but will settle and crackle as they cool.
