This week I decided that I am going to focus all my anxious energy on comforting, classic baked goods. Today’s project: Chocolate Chip Cookies!
I love a good chocolate chip cookie, and a good chocolate chip cookie has to meet certain requirements. It has to have a slight crunch on the outside while remaining chewy in the middle. It needs to be packed full of high-quality bittersweet chocolate, and it has to have a sprinkling of flaky sea salt to finish it off. Add a cup of coffee on the side and you’ve got cookie perfection.
This recipe is really quick and easy. It is also relatively small, (makes about 12 generously sized cookies.) You can easily double this recipe to share, or keep balls of cookie dough in your freezer to bake off whenever the craving hits!
Start by preheating your oven to 325-degrees, and lining 2 baking sheets with parchment paper. Next, melt your butter, and then set it aside to cool for a minute or two. While that is happening, sift together the flour, baking soda, and salt. In a large bowl, mix together both of the sugars, vanilla, and melted butter. Add one whole egg and one egg yolk. Once those are all well combined you can add in your dry ingredients, stirring just until it is incorporated. Finally, stir in your chocolate chips. I like to use Guittard bittersweet or dark chocolate chips, but feel free to use whichever type of chocolate you prefer.
This cookie dough does not have to chill before baking, so once your chocolate is mixed in you are ready to scoop! Scoop out balls of cookie dough that are about 3 tablespoons in size. Be sure to leave a generous amount of room between the cookies since they will spread while baking. Before placing your cookies in the oven, sprinkle each one with a little pinch of flaky sea salt. Trust me, it is the best.
Bake the cookies at 325-degrees for 8 minutes. Rotate your pan and continue to bake them for an additional 8 minutes, or until they are slightly golden around the edges. Allow the cookies to cool completely while still on the baking sheet. Enjoy!

Ingredients
- 1 1/3 cup All-Purpose Flour
- 1/4 tsp. Salt
- 1/4 tsp. Baking Soda
- 1/2 cup Butter – melted
- 1 cup Brown Sugar
- 1/3 cup Granulated Sugar
- 2 tsp. Vanilla Extract
- 1 Egg
- 1 Egg Yolk
- 1 1/3 cup Bittersweet Chocolate Chips or Dark Chocolate Chips
- Optional: Flaky Sea Salt for topping
Instructions
- Preheat your oven to 325-degrees. Line 2 baking sheets with parchment paper, set aside.
- Melt the butter.
- Sift together the flour, baking soda, and salt.
- In a large bowl, whisk together the melted butter, brown sugar, granulated sugar, and vanilla extract.
- Whisk in one egg and one egg yolk.
- Stir the dry ingredients into the wet ingredients until just combined. Be careful not of overmix the dough.
- Stir in the chocolate chip.
- Scoop cookies into about 3 tablespoon sized balls.
- Place on your baking sheet being sure to leave plenty of room for cookies to expand.
- Sprinkle cookies with flaky sea salt, and then place in the oven.
- Bake at 325-degrees for 8 minutes. Rotate your pans and bake for an additional 8 minutes, or until the cookies are lightly golden around the edges.
- Allow the cookies to cool and finish setting on the baking sheet.

I haven’t made homemade cookies in forever. But I tried these and OMG!!! So good! I did a double batch and they were gone in 2 days!
Don’t forget to add the salt flake on top!!!
